Origins of Kélonia: Located in Saint-Leu on Reunion Island, Kélonia takes its name from the Chélonia turtle, the species most present in the Indian Ocean. It is an aquarium, museum, research, intervention and care center dedicated to marine turtles, which is also located right next to the chef's childhood beach, hence this inspiration.
